Fine, pale lemon Blanc de Blancs with citrus, crunchy Granny Smith apple, yellow plum and golden kiwi, layered with brioche, oyster-shell minerality and wet stone. Delicate sea-foam mousse, bright acidity and a long chalky, saline finish.
