Concentrated citrus, pear and white stone fruit with beeswax, toasted hazelnut, flinty oyster-shell minerality and saline lift. Silky, saline-savory mid-palate and a long, pithy finish.

Roast chicken, pork belly, mushroom risotto, beurre blanc seafood (lobster, crab, scallops); Asian: miso-glazed cod, seared scallop nigiri, tempura prawns, mildly spiced Thai or Vietnamese fish dishes.
 

 
釀造方式
 
Hand-harvested Gingin-clone fruit; whole-bunch pressing; spontaneous (wild) ferment in barrique (56% new), 15 months maturation (8 months in oak, then blended to tank) with extended lees contact; natural MLF finished.

Vasse Felix, founded 1967 by Dr Tom Cullity, is Margaret River’s founding estate. Heytesbury is their flagship Chardonnay made from select Gingin-clone blocks on the estate.
