Pale gold; flinty struck-match and lemon-lime citrus with white peach and stone-fruit, coastal herb, candle-wax and grilled-nut/oak complexity. Silky, full core, precise high acidity and saline, pithy finish.

Western: roast chicken, pork, lobster, scallops, mushroom or truffle risotto, creamy seafood pasta, aged cheeses. Asian: miso-glazed black cod, soy/yuzu crab, tempura prawns, seared salmon with teriyaki, delicate sushi and sashimi.
 

 
釀造方式
 
Whole-bunch pressed, wild fermentation in French oak barriques (c.56% new), ~9 months maturation with extended lees contact and bâtonnage; partial malolactic; finished under screwcap.
