品鑑筆記
 
Herbaceous, floral and citrus-led with a clear juniper core. Notes of lemon peel, mint, chamomile and heather, finishing dry with gentle spice and earthy, coastal botanicals. Smooth, slightly oily texture.

Western: gin & tonic with lemon/thyme, oysters, grilled scallops, roast chicken, goat cheese. Asian: sashimi/sushi, ceviche-style dishes, Thai green curry (lightly spiced), Vietnamese spring rolls.
 

 
釀造方式
 
Small-batch vapor-infusion distillation using 100% wheat spirit and Islay spring water. 9 core gin botanicals are macerated; 22 wild Islay botanicals are placed in a vapour basket. Distilled slowly in a Lomond still (c.17 hours).
