Fino-like, textured white: jasmine, beeswax, lemon peel, white currant and mirabelle. Mineral, saline backbone with mouth‑coating texture, racy acidity and a long, slightly phenolic finish.

Hand‑harvested; whole‑bunch fermentation ~5 days in stainless steel and cement, followed by 6 months ageing in concrete; light skin contact, controlled oxidation/maceration.
