Pale yellow with green highlights. Aromas of lemongrass, green apple, white flowers and wet stone. Bright, saline acidity, linear and energetic with almond kernel notes and a focused, slightly saline finish.

Oysters, clams, ceviche, grilled white fish, goat cheese, roast chicken (western); sashimi/sushi, steamed fish with ginger & scallion, tempura, Vietnamese spring rolls, light Thai salads (asian).
 

 
釀造方式
 
Certified organic/biodynamic; hand-harvested, gentle whole-bunch pressing, ambient-yeast fermentation, aged 12–18 months in used barrels/foudres with minimal SO2 at bottling.
