Organic viticulture; hand-harvested; soft pressing; alcoholic fermentation in stainless steel (controlled temperature), no malolactic; 12–15 months on fine lees in steel, plus months in bottle.

Family-run Suavia (Tessari family), founded 1982 in Fittà di Soave. Monte Carbonare: ~6 ha of old vines on black volcanic (basalt) soils at ~280m; organic certified vineyards.
