Rose and violet florals with red cherry, plum, licorice, tobacco, mint and wild herbs. Precise acidity, fine-grained firm tannins, saline minerality and a long balsamic finish.

Western: roast duck, osso buco, braised short ribs, mushroom or truffle risotto, aged pecorino and other hard cheeses. Asian: Peking duck, char siu, Korean galbi (beef ribs), soy-braised beef, mushroom hot pot or shiitake stir-fries.
 

 
釀造方式
 
Hand-harvested Nebbiolo; spontaneous fermentation with submerged cap and ~25-day maceration; malolactic in wood; aged 18–24 months in French oak (~15% new); bottled unfined; organically farmed.
 

 
酒莊資訊
 
Family-owned Azienda Agricola Sottimano (Neive), founded by Rino Sottimano in the late 1960s/1970s. Farms ~18–19 ha across five Barbaresco crus; Pajorè is the single-vineyard site in Treiso, farmed close-to-nature/organic.
