Pétillant‑naturel (ancestrale). Chardonnay and Pinot Noir fermented separately on indigenous yeasts (Chardonnay with extended maceration); blended with a small portion of off‑dry rice wine to trigger secondary in‑bottle fermentation; minimal sulfur, biodynamic farming.
