釀造方式
 
Hand-harvested fruit; destemmed and fermented in open-top tanks with 2–4 day cold soak and 2–3 punch-downs daily; malolactic fermentation and aging 14–16 months in French/Burgundy oak (≈20–25% new).

Robert Biale Vineyards, a family operation farming Zinfandel since the 1930s; 'Black Chicken' honors Aldo Biale’s bootleg-era nickname. The label was launched legally in 1999 and highlights Oak Knoll-sourced old-vine Zinfandel.
