Apple blossom, white lilac, green apricot, lychee and white peach with wet chalk and saline minerality. Pithy, concentrated palate with long, crisp acidity, crystalline texture and a powdery, fine grip.

Western: pike or spinach quenelles in beurre blanc, grilled scallops, oysters, seafood pasta, roast chicken. Asian: sushi/sashimi, tempura prawns, steamed white fish with ginger-soy, Vietnamese spring rolls, light Thai or Chinese seafood dishes.
 

 
釀造方式
 
Organic viticulture; 50–70‑year‑old vines; gentle overnight pressing, indigenous yeast fermentation with extended lees contact; aged mainly in large Stockinger 600L foudres and older barrels, finished in stainless before bottling.
