Complex nose of ripe red and black fruit, lavender, fennel, cedar and tobacco. Silky, expansive palate with velvety dusty tannins, vibrant acidity and a long, balsamic finish with spice and mineral undertones.

Western: roast lamb, grilled beef, game, aged Manchego, chorizo and hearty stews. Asian: Peking duck, char siu, Korean BBQ, spicy Szechuan beef, mushroom soy stir-fries.
 

 
釀造方式
 
Hand-harvested; fermented with indigenous yeasts in small open oak tinas/vats; matured 25–29 months in barrels and foudres of various sizes; long bottle ageing (bottled 19 June 2019).

Historic estate (14th century) restored by Jaime Rodríguez in 1967. ~150 ha with 105 ha renovated; organic/biodynamic practices on high-altitude limestone terraces.
