Elegant and fresh red showing red and woodland fruits, subtle toast and spice, a faint vegetal note and a lingering red-fruit finish with silky, ageworthy tannins.

Western: grilled lamb, roast beef, braised short ribs, game, aged hard cheeses. Asian: Korean BBQ, Peking duck, char siu, Sichuan pepper beef, teriyaki beef dishes.
 

 
釀造方式
 
Hand-harvested. 50% whole-cluster carbonic maceration (14 days), 50% crushed/destemmed fermentation (14 days). Low extraction; ~18 months in second-use French oak barrels.
