Intense Blanc de Noirs: ripe red fruit, dried apricot, orange zest, pear, chalky minerality and brioche. Textural, full-bodied with vibrant acidity and a long, saline finish.

Western: oysters, scallops, lobster, roasted pork belly, mushroom risotto, roast chicken. Asian: sashimi, sushi, tempura, grilled mackerel, Korean-style grilled pork (samgyeopsal), light Chinese dim sum.
 

 
釀造方式
 
Méthode traditionnelle: fermentation and élevage partly in oak barrels, bottled under cork for second fermentation, ~4–4.5 years on lees, disgorged (Dec 2023) with ~3 g/L dosage.
