品鑑筆記
 
High-toned, fresh red: sour cherry, pomegranate, watermelon and raspberry with white pepper and lemony citrus. Supple, juicy palate, lively acidity, light body, crushed-stone minerality and a slight stem-driven bitterness on the finish.

Roast chicken, grilled salmon, pork belly, charcuterie, mild-to-medium spicy Thai or Vietnamese salads, Korean BBQ (pork/short rib), teriyaki chicken, seared tuna sushi, soft cheeses.
 

 
釀造方式
 
Hand-harvested, cold-soaked, natural (wild) ferment in small open-top fermenters with partial whole-cluster; hand-plunged, basket-pressed and aged in old French barriques; minimal SO2 and light filtration.

Ochota Barrels was founded by Taras and Amber Ochota (2000). Small-batch, low-intervention wines from Adelaide Hills and McLaren Vale; Amber continues the project following Taras’ passing.
