Pear, white peach and citrus framed by oyster-shell minerality, bready/nutty lees and subtle spice from restrained oak. Precise acidity, medium-plus body and a long, spicy, saline finish.

釀造方式
 
Whole-bunch pressing, wild-yeast fermentation in (mostly) barrel with ~10% new French oak; 10 months on full lees with monthly bâtonnage, natural malolactic and short tank élevage before bottling.
