Fresh red and black cherries, raspberry, violet and rose petal aromas with subtle smoke and spice. Silky, fine-grained tannins, lively acidity, mineral undertow and a long, elegant finish.

Western: roast duck, mushroom risotto, lamb saddle, soft blue or aged cow cheeses. Asian: Peking duck, miso-glazed salmon, char siu, mushroom-based Japanese dishes (dobin mushi) and yakitori.

Manual harvest; low-intervention vinification with cold soak and native/controlled fermentations; 12–18 months élevage in French oak (approx. 30–50% new).
