Very-aged Margaux: tertiary aromas of leather, cedar, tobacco, dried red fruit and forest floor; medium-bodied, silky but softened tannins, moderate acidity and a lingering cedar-vanilla finish.

Western: roast lamb, beef en croûte, game birds, mushroom risotto, aged hard cheeses. Asian: Peking duck, Cantonese roasted meats (char siu), braised beef noodle dishes, soy-miso braised short ribs, mushroom and black-bean dishes.

Traditional Bordeaux vinification: fermented in oak/barrel and aged in (often new) oak for extended periods (historically ~18–24 months); long bottle ageing developed tertiary character.
