Early-harvest grapes; direct pressing and cold fermentation in temperature-controlled stainless steel tanks to preserve freshness. Minimal skin contact, no oak influence.

Maison Saint Aix (AIX) was acquired by Eric Kurver in 2009. The estate covers ~75 ha at 400–420m elevation in Coteaux d'Aix-en-Provence and was modernized with state-of-the-art cellar equipment focused on premium rosé production.
