Bright lemon and lime zest, green apple and pear skin, almond-skin and saline notes; chalky, stony minerality, brisk acidity and a long, slightly bitter almond finish with subtle seasoned-oak lift.

Hand-picked, de-stemmed/ crushed and pressed. Wild (indigenous) yeast fermentation; matured ~9–10 months in old/seasoned small oak barrels; sterile filtered and bottled after short cellaring.
