Red cherry and dark berry fruit with stone-fruit, subtle smoke and baking-chocolate notes; chalky minerality, lively acidity, velvety texture and medium–long mineral finish.

釀造方式
 
Hand-harvested, destemmed, cold soak and ~3-week maceration; spontaneous fermentation, malolactic in barrel, aged ~12 months (minor new oak), minimal filtration.

From the Les Herbues lieu-dit in Fixin (old vines ~80–85 years) on limestone/marl soils. Louis Boillot (est. early 2000s) is a small, low-intervention Burgundian producer from a noted Volnay winemaking family.
