Crisp stone fruits and white flowers with citrus oil, hazelnut and beeswax; pronounced mineral salinity and a satiny, textural mid-palate finishing with apricot and a faint anise note.

Western: roast chicken, grilled lobster or scallops, creamy mushroom risotto, aged Comté. Asian: miso-glazed cod, sashimi, tempura, lightly spiced Thai or Vietnamese fish dishes.
 

 
釀造方式
 
Hand-harvested Chardonnay; barrel fermentation and ~12 months élevage on fine lees (c.20% new oak), followed by resting in stainless or neutral vessels. Bottled by hand with minimal SO2 and light or no filtration.
