Perfumed and mineral-driven: wild red and black berries, licorice, subtle floral and garrigue notes. Silky tannins, bright acidity and fine-grained texture with a long, saline finish.

Western: roast lamb, grilled pork, mushroom risotto, charcuterie and Manchego, roasted root vegetables. Asian: Korean bulgogi, yakitori, miso-glazed salmon, Cantonese roast pork (char siu), mild Sichuan pork.
 

 
釀造方式
 
Organic, hand-harvested; spontaneous fermentation with indigenous yeasts in small stainless steel and oak vats; aged ~15 months in large 1,500–2,000L foudres; minimal intervention.
 

 
酒莊資訊
 
Ladeiras do Xil is Telmo Rodríguez’s project (with Pablo Eguzkiza) restoring ancient terraced vineyards. As Caborcas is a 2.5ha single vineyard with many vines over 80 years, farmed organically.
