Blackberry, mulberry and black cherry with notes of leather, earth, licorice, clove and menthol. Medium–full-bodied, supple density, firm powdery tannins and fresh acidity leading to a long, persistent finish.

Western: roasted duck, coq au vin, grilled lamb, mushroom risotto, charcuterie and aged cheeses. Asian: Peking duck, char siu pork, soy-ginger glazed chicken, mushroom ramen or braised beef with hoisin.
 

 
釀造方式
 
Organic viticulture (certified 2019); partial destemming, cold pre-fermentation maceration, native-yeast fermentation, gentle extraction and 12–16 months oak aging (≈35% new for Numerus Clausus).
