Medium-bodied Chardonnay with lemon, white peach and candied citrus, hazelnut and chalky minerality, subtle toasted oak and a very long, refined, nutty finish.

Western: oysters, scallops, butter-poached lobster, roasted chicken with herbs, creamy mushroom pasta, goat cheeses. Asian: sushi/sashimi, tempura, miso-glazed black cod, steamed fish with ginger/soy, Cantonese/Shanghai-style seafood.
 

 
釀造方式
 
Direct whole-bunch pressing, natural/spontaneous fermentation in oak, aged 12 months on lees in barrels (c.20–30% new), then 4–6 months in tank.
