Cool-climate, Burgundian-style Chardonnay: white peach, grapefruit and preserved lemon with fennel and almond, savoury lees and a flinty struck‑match mineral note. Bright acidity, creamy texture and gentle oak spice lead to a long, chalky, saline finish.

Roast chicken with herb butter, creamy mushroom risotto, lobster or scallops with beurre blanc, pork belly; Asian: miso‑marinated black cod, seared salmon teriyaki, sushi/sashimi, mildly spiced Thai or Vietnamese dishes.
 

 
釀造方式
 
Fruit from Top Paddock (SRM block). Fermented in mainly 2nd/3rd-fill French oak with occasional batonnage; matured ~12 months in cask then ~3 months in stainless. Minimal new oak, bottled unfined and unfiltered with small SO2 at bottling.

Hoddles Creek Estate (D’Anna family) planted from 1997. Winemaker Franco D’Anna sources fruit from high‑altitude Top Paddock blocks; small‑volume, premium '1er' cuvée produced only in select years.
