Dark cherry and plum core with blackcurrant, cedar, dried herbs and olive tapenade. Smoky oak and savory spice frame ripe fruit; firm yet polished tannins and a long, mouthwatering finish.

Western: roast lamb, grilled ribeye, mushroom risotto, tomato-based pasta. Asian: Korean BBQ (bulgogi), char siu or Cantonese roast pork, Peking duck, spicy Sichuan eggplant.
 

 
釀造方式
 
Hand-harvested, destemmed, cold-soaked, native fermentation with ~21 days on skins. Basket-pressed; matured ~15 months in fine-grain French oak (approx. 25% new).

Hickinbotham Clarendon Vineyard, planted from 1971, is a single-estate site in McLaren Vale. Family-owned, practicing organic/biodynamic techniques; winemakers include Christopher Carpenter and Peter Fraser.
