Transparent ruby; aromas of red cherry, maraschino, rose petals, crushed lava and herbal laurel. Palate shows tart red fruit, saline volcanic minerality, savory Mediterranean herbs, fine chewy tannins and a long, energetic finish.

Western: roasted lamb, grilled ribeye, pork shoulder, aged pecorino or provolone, mushroom risotto. Asian: Korean BBQ, char siu (Cantonese BBQ pork), spicy Sichuan beef, Thai basil pork, grilled swordfish with capers.
 

 
釀造方式
 
Hand-harvested; fermentation with indigenous yeasts in large wooden tino, extended skin maceration, spontaneous malolactic fermentation; aged 18–24 months in large oak foudres/tinos and bottled after further aging. Low-intervention, organic practices.
