Pale yellow with fine mousse. Aromas of fennel, star anise, mint, poached pear, almond, mirabelle and rhubarb. Crisp citrus acidity, creamy texture, saline minerality and a slightly bitter, chiseled finish.

Méthode traditionnelle (traditional Champagne method). Primary fermentation in stainless steel, malolactic typically avoided, aged 4+ years on lees; disgorged and rested post-dosage (≈4 g/L).
