品鑑筆記
 
Pale yellow with green highlights. Aromas of white flowers, hawthorn, green apple and citrus; warming shows grapefruit peel, ginger and star anise. Palate is vibrant citrus and pineapple with a fine mousse and a saline, lingering finish.

Western: oysters, seared scallops, crab, parmesan risotto, gougères, young Comté or Parmigiano. Asian: sushi/sashimi, tempura prawns, ceviche, Vietnamese or Thai seafood salads, delicate dim sum.
 

 
釀造方式
 
Méthode traditionnelle (secondary fermentation in bottle). Aged minimum 4 years on lees, disgorged and rested ≥6 months; dosage ~7 g/L. Malolactic fermentation is deliberately avoided.
