Concentrated dark cherry and plum with violet, dried thyme and sage, plus cocoa, liquorice and anise. Powdery, sweet-chewy tannins, firm acidity and a long, structured finish—rich, ageworthy Pinot Noir.

Western: roast duck, lamb, pork, beef bourguignon, mushroom risotto. Asian: miso-glazed salmon, char siu, duck pancakes, teriyaki chicken, bulgogi (Korean BBQ).
 

 
釀造方式
 
Organic/biodynamic viticulture; 25% whole-cluster; native yeast fermentation; gentle gravity-flow destemming; 13 months in French oak (≈25% new); unfined and unfiltered.

MacMuir Vineyard (≈5.1 ha), purchased 2010, planted 2012 on heavy silt soils near Bannockburn; high-density plantings (4,667 vines/ha); certified BioGro & Demeter (biodynamic).
