Fresh yellow fruit and pear with meadow herbs, saline minerality, subtle white stone fruit, blossom-honey notes and gentle tropical hints. Medium-bodied with crisp acidity and a long, savory finish.

Hand-harvested; fermented with indigenous yeasts (traditionally ~14 days) in wooden cuves at low temperature; low-intervention, organic/in-conversion practices and low SO2; rested before bottling.
