Deep, powerful and layered: citrus oil, preserved lemon, sage, fennel and caraway with oyster-shell minerality. Lemongrass, spearmint and grapefruit drive a pulsating, intense finish.

Western: butter-poached lobster, roast chicken with herbs, creamy mushroom risotto, seared scallops. Asian: miso-glazed black cod, soy-ginger salmon, tempura prawns, Cantonese-style steamed fish.
 

 
釀造方式
 
Organically farmed, high-density dry-farmed Kearney Estate (Mt Eden clone). Barrel-fermented and aged 11 months in 25% new French 'cigare' oak, then 6 months settling in tank.
