Perfumed red and black fruits—raspberry, strawberry, blackberry—and morello cherry with notes of black pepper, iris and tonka. Slender, fresh palate with fine acidity, subtle spice and a mineral-tinged, lingering finish.

Western: roast lamb, beef bourguignon, charcuterie, mushroom risotto, soft cheeses. Asian: Peking or hoisin duck, teriyaki salmon, mushroom soba, grilled pork (char siu), miso aubergine.
 

 
釀造方式
 
Hand-harvested; ~60% whole-cluster fermentation; 11-day maceration with 5–7 punchdowns; pressed, settled, 13 months in barrels (25% new), racked and bottled without fining or filtration.
