品鑑筆記
 
Concentrated dark cherry and black-berry fruit with notes of cocoa, espresso, cedar, balsamic and sweet spice. Silky yet structured, with bright acidity, polished tannins and a long, slightly bitter cocoa finish.

Western: osso buco, roasted/grilled lamb, mushroom risotto, aged Parmigiano-Reggiano, charcuterie. Asian: Korean BBQ (bulgogi), Chinese red-braised beef, Peking duck, char siu, hearty Japanese sukiyaki or teriyaki beef.
 

 
釀造方式
 
Light appassimento (~1.5 months), stainless-steel fermentation at ~28°C with mechanical punch-downs and ~15 days maceration; aged ~36 months in new barriques (≈70% French, 30% American).
