Medium-bodied Pinot Noir with bright cherry and raspberry, violet florals, forest-floor earth, fine mineral grip, subtle spice and silky texture; fresh acidity and polished tannins lead to a medium-long finish.

Western: roast duck, coq au vin, mushroom risotto, pork tenderloin, aged cheeses. Asian: Peking duck, char siu, miso-glazed salmon, teriyaki chicken, shiitake ramen or mushroom hot pot.
 

 
釀造方式
 
Organic/biodynamic viticulture; hand-harvested 2021; grapes gravity-fed, not crushed; cold pre-fermentation maceration then ~18 days cuvaison; ~30% whole-bunch practices; aged ~15 months in oak (≈20% new), bottled December 2022.
