Perfumed red-fruit bouquet of wild cherry, raspberry and rose petal with white pepper and a touch of tobacco. Medium-bodied, silky texture, fine grain tannins and mineral (limestone) lift; elegant, floral and persistent on the finish.

Western: roast duck, mushroom risotto, roasted chicken, pork loin, charcuterie, Brie/Camembert. Asian: Peking duck, miso-glazed salmon, soy-braised pork belly, shiitake mushroom hotpot, teriyaki salmon.
 

 
釀造方式
 
Organic/biodynamic viticulture; parcel-by-parcel vinification with partial whole-cluster inclusion (c.20–52% depending on parcel) and élevage in French oak (some new) for ~12–18 months.
