Matured black cherry and plum with tertiary leather, tobacco, garrigue, dried herbs and licorice. Silky, concentrated palate with integrated oak, balanced acidity and a long, savory finish showing earthy and underbrush notes.

Western: roast lamb, beef short rib, duck confit, aged cheeses. Asian: Peking duck, Cantonese char siu, Korean grilled short ribs (galbi), braised beef with soy and star anise.
 

 
釀造方式
 
Hand-harvested, partial destemming (~60%), co-fermentation (‘pre-blending’), fermented on indigenous yeasts; aged in concrete vats, foudres and older demi-muids/ barrels; limited new oak, gravity-fed cellars.

Clos (Clos du) Mont-Olivet — family-owned (Sabon) estate since 1932. La Cuvée du Papet is the top cuvée from the oldest vines (many >50–100+ years) and is only produced in exceptional vintages.
