Pure, mineral-driven Chenin: pear, quince and citrus with white flowers, chalky salinity and subtle vanilla/almond from oak. Medium-full, taut acidity and a long, saline finish.

Western: oysters, scallops, roast chicken, goat cheese, creamy seafood pasta. Asian: tempura, sushi (white fish), Vietnamese spring rolls, lightly spiced Thai seafood, Korean grilled white fish.
 

 
釀造方式
 
Organic conversion, hand-harvested. Fermented in stainless then transferred to foudre/500L barrels, aged 9–11 months on lees with little/no malolactic; bottled unfiltered.
