Pure, energetic Chenin: herbs, ripe orchard fruit, chalky minerality, spice and subtle vanilla. Tense, bright palate with saline, mouthwatering finish and lingering citrus and stone-fruit notes.

Western: roast chicken, pork with apples, grilled salmon, creamy cheeses. Asian: sushi/sashimi, miso-glazed fish, Vietnamese spring rolls, mildly spiced Thai or Chinese seafood dishes.
 

 
釀造方式
 
Organically farmed, hand-harvested Chenin. Wild/native fermentations, aged 9–12 months on fine lees in a mix of stainless steel, large foudre and oak demi-muids.
