Metodo Classico (traditional method). Hand‑harvested, gentle whole‑cluster pressing in low‑oxygen, stainless‑steel fermentation of base wines, assemblage with reserve wines and 25–30 months on lees; oxygen‑free disgorgement via Ca’ del Bosco patented system.
