Bright red cherry and wild strawberry with rose, citrus peel, savory herbs and crushed-stone minerality. Medium-bodied with vivacious acidity, ultra-fine chalky tannins, subtle vanilla/spice from oak and a long savory finish.

Western: bistecca alla Fiorentina, pappardelle al ragù, wild mushroom risotto, aged pecorino, charcuterie. Asian: Peking duck, char siu, bulgogi (Korean BBQ), teriyaki salmon, spicy Szechuan eggplant.
 

 
釀造方式
 
Hand-harvested from six vineyards with multiple selective picks. Indigenous fermentations in open-top vats/barriques, 7–10 days maceration, aged ~20 months in old barriques and 50hL casks; minimal-intervention approach.
