品鑑筆記
Dense, dark-amber; aromas of dried plums, dates, propolis, gingerbread, tobacco, caramel and molasses. Palate is concentrated, sweet and spicy with dried apricot, smoked hazelnut and candied citrus; very long, persistent finish.

Western: cantucci/almond biscuits, fruit tarts, blue/creamy cheeses (Roquefort), foie gras, caramel desserts. Asian: mooncakes, sesame balls, sweet sticky rice (mango sticky rice), red-bean desserts, mildly spiced duck or pork with honey-soy glaze.
釀造方式
Hand-harvested Sangiovese left to appassire on straw/bamboo mats, gently pressed, slow natural fermentation in 50–60L 'caratelli' with indigenous 'madre' yeast, aged ~10 years in caratelli with oxidative maturation.
