Fragrant oyster-shell, jasmine and red toffee apple on the nose. Palate shows honey-cake, buttered brioche, ripe citrus and saline minerality, supported by bright acidity and a long, elegant finish.

Oysters, caviar, smoked salmon, creamy seafood pasta, roast chicken; Asian: sashimi/sushi, tempura, dim sum, light Chinese seafood dishes, Peking duck (as contrast to acidity).
 

 
釀造方式
 
Méthode traditionnelle (secondary bottle fermentation), six years on tirage with extended lees ageing; disgorged with 3.4 g/L dosage.
