Aromas of blackberry, pomegranate, violet, thyme and rose petal. Juicy black cherry and mulberry on the palate with slate-driven minerality, baking spice and a whisper of coffee. Silky fine-grained tannins, bright acidity and a persistent, savory finish.

Western: roast lamb, grilled pork, beef stew, charcuterie, mushroom risotto. Asian: Korean BBQ, char siu, miso-glazed aubergine, yakitori, mildly spicy mapo tofu, grilled shiitake mushrooms.
 

 
釀造方式
 
Hand-harvested, fermented with indigenous yeasts, aged ~12 months in 225L French oak barrels (≈35% new), lightly fined or unfined and bottled to preserve terroir expression.

Paul Hobbs partnered with Galician viticultor Antonio López; winery in the village of Alvaredos, producing site-specific wines from steep terraced vineyards in Ribeira Sacra since 2015.
