Tasting Note
Ripe cherry and wild-berry core with dried rose, violet, cedar and warm spice. Silky texture, lively citrus-tinged acidity, fine polished tannins and a cocoa-tinged, long finish; classic Ripasso richness with elegant restraint.
Food Pairing
Western: roasted/grilled pork, braised beef, pizza, tagliatelle with ragù, aged cheeses. Asian: Peking duck, char siu (Cantonese roast pork), beef bulgogi, teriyaki chicken, mushroom or soy‑braised dishes.
Production Method
Traditional Ripasso: fresh grapes fermented, then re‑fermented ~14–15 days on Amarone pomace. Aged ~2 years in large Slavonian oak ovals (big casks) then bottle-aged ~6 months.
