Tasting Note
Honeyed stone and dried apricot, orange peel, white flowers and wild roses. Silky, unctuous texture with juicy acidity and a long, balanced finish.

Western: blue cheeses, foie gras, fruit tarts, crème brûlée, nut-based desserts. Asian: mango sticky rice, Chinese egg tarts, mild Thai curries with fruit, Japanese yuzu desserts.

Production Method
Late (tardío) manual harvest; gentle skin contact, fermentation with selected yeasts and arrested by cooling to retain residual sugar; typically unoaked.
