Tasting Note

Fresh citrus and green apple with white pear and stone-fruit notes, white flowers, subtle leesy cream and gentle vanilla from used oak, marked minerality, bright acidity and a saline, clean finish.

Western: roast chicken, grilled salmon, creamy pasta, shellfish, goat cheese. Asian: sushi and sashimi, tempura, Thai green curry (milder), miso-glazed fish, Vietnamese spring rolls.


Production Method

Hand-harvested, direct-pressed; fermented with indigenous yeasts. ~50/50 aging: concrete vats and used 500L French oak barrels; aged on fine lees to preserve freshness.
