Tasting Note
Fresh citrus and green apple with white pear and stone-fruit notes, white flowers, subtle leesy cream and gentle vanilla from used oak, marked minerality, bright acidity and a saline, clean finish.

Production Method
Hand-harvested, direct-pressed; fermented with indigenous yeasts. ~50/50 aging: concrete vats and used 500L French oak barrels; aged on fine lees to preserve freshness.
