Tasting Note
Crisp, lean Chardonnay — citrus, green apple and pineapple with stony/mineral and faint creamy notes. Light savoury and saline finish with restrained, fine oak and vibrant freshness.

Western: grilled/roasted white meats, seafood (oysters, sea bass), paella, creamy pasta, mild cheeses. Asian: sashimi/sushi, tempura, steamed fish, light Thai/Chinese seafood dishes.

Production Method
Direct pressing; fermentation with native yeasts in concrete vats; ~30% aged in large used French oak (500L). Little to no malolactic fermentation to preserve freshness.
