Tasting Note
Blackberry, black cherry and plum with violet and graphite; savory herbs, baking spice and chalky/mineral notes. Firm, refined tannins, vibrant acidity and a long, spicy finish.

Western: grilled steak, Argentine asado, roasted lamb, mushroom risotto, aged Manchego or other hard cheeses. Asian: Korean BBQ (bulgogi/galbi), Sichuan-style beef, Cantonese char siu, grilled yakitori or teriyaki beef skewers.

Production Method
Selected grapes fermented in concrete vats with native yeasts (gravity-filled), ~20-day maceration; aged primarily in large French oak foudres for ~18–24 months and bottled unfiltered.
